Roasted Cauliflower and Cheese!

So the other day I made this..





Yes! that's cheese.. I am one of those who puts cheese in each and everything possible! Not really a fan of cauliflower so I thought of making it more palatable for my taste buds..


You will need:

Olive Oil - 2 Tbsp
Cauliflower - 1 medium size cut into florets
Green Peas - 1/2 cup
Onion - 1 large chopped finely
Ginger Garlic Paste - 1 tbsp
Tomato puree (2 large size)
Green Chillies - 4 slit
Curry leaves
Chilli Powder - 1 tsp
Black Pepper Powder - 1 tsp
Cumin Powder - 1 tsp
Garam Masala Powder - 1 tsp
Salt to taste
Plain Yogurt - 1/2 cup
Coriander leaves finely chopped
Cheese - your favourite one and add as much as you like! :D 

Clean the cauliflower florets and place them on the microwave tray. Drizzle some olive oil and let it roast in the microwave for sometime.




till the microwave is doing its work we can prepare the rest of the gravy..


Heat oil in a saucepan. Add curry leaves, onions and chillies till the onion get the golden brown effect.


Add Ginger Garlic paste and saute it for a min..




Now add in all spices and water so that the spices don't stick to the pan and burn.


Time for tomato puree..




By this time your cauliflower florets must be ready..




Love that golden brown effect..


Add the cauliflower florets and green peas in the masala. Pour in water to make it gravy consistency.

Take some curd in a bowl, add some of the gravy and mix well, now add it to the curry. This way it won't leave behind lumps of curd and your gravy is nice and smooth. (Grandma's tip)

Add in coriander leaves and cheese generously. 



Serve it with roti or naan..
