Frittata - Onion & Potato

I think I just found the perfect Sunday breakfast brunch. The right amount of protein and some grilled cheese to get started with your lazy Sunday.

Onion & Potato Frittata.




You will require :
2-3 tbsp Olive Oil
1 potato, peeled and cut in small cubes
1 Large onion, chopped
1 Tsp garlic
5 Eggs
1/2 cup milk
1 small tomato, cut in small cubes
Cheese
1 tsp Piri Piri
2 Tbsp coriander
Salt and Pepper

Add olive oil in a pan. After the oil is hot, add potato and onion until it caramelizes.

It will take about 10-15 mins, until then...


In a bowl, add eggs, tomato, piri piri, coriander, milk and cheese.

Add salt and pepper as per taste.



Just before the onion and potato caramelize, add garlic. Cook until the raw smell fades.


 Give it a good mix.


In the same pan, add the egg mixture.


Let it cook for about 7-8 minutes until it is cooked half way or until the base is nice and thick (just like omelette).


Now, the tricky part.. flipping the frittata! If your Frittata survives the flip (for the record, mine did not, it tore in a zillion pieces! but I just put them back making a circle and sprinkled some cheese to hide my flaws!) now would be the time to put it in the microwave! 

Add some more cheese for garnish.


I let it cook in the microwave for 8-9 mins on high rack till the cheese melted and gave it a golden brown effect.


Add its ready!
