The Classic Lasagne


It's ok! Scroll back up and stare at the bechamel sauce and cheese oozing out. Go Ahead! I won't tell anyone we are friends after all.



I made this recipe for Christmas lunch at home. I was really intimidated to try this recipe especially because it was my first time and the sheer volume of work it takes it takes to get the recipe right.

You will need:
For the Filing
1/2 kg Boneless Chicken
1 medium sized onion
6-7 Garlic Cloves, finely chopped
1 Zucchini, peeled and sliced
1 Yellow Bell Pepper
1 Red Bell Pepper
1 Green Bell Pepper
1 cup Spinach
10 Mushroom, sliced
Olive Oil
2 tbsp Italian Seasoning
1 tbsp red chilli flakes
1 tbsp black pepper





Start by placing all the vegetables except the spinach in microwave proof plate. Drizzle 1tbsp olive oil and 1 tbsp Italian seasoning. Roast them in microwave for 15 minutes and it should be done.



By the time, start working on the Chicken.

In a pan, add about 2 tbsp oil and add chopped garlic. After the raw smell from the garlic fades away and chopped onion till it becomes soft. Now add chicken and season it with red chilli flakes, 1 tbsp Italian seasoning and black pepper. Once the chicken was cooked, I thinly sliced it.





For the Bechamel Sauce

I stole this recipe from Martha Stewart (I always learn from the best!)

3 tbsp butter (i used salted, if u use unsalted add about 1/2 tsp coarse salt)
1 medium sized onion
1/4 cup all - purpose flour
4 cups whole milk

In a saucepan, melt butter over medium heat. Add onion and cook until softened, about 6 minutes


Add flour and salt; cook, stirring continuously, until mixture is pale golden, has a slightly nutty aroma, about 5 minutes.




Whisking constantly, pour in 2 cups milk, add 2 more cups milk and whisk until smooth. Cook mixture, stirring constantly along the bottom of pan, until boiling, about 7 minutes.



Reduce heat to low. Simmer gently, stirring occasionally, until sauce thickens and does not feel grainy when a very small amount is rubbed between two fingers, about 10 minutes.

For the Spinach, just drizzle oil in pan and add in spinach and cook it for 5 mins.

The pasta sheets needs to be cooked as per the instructions on the back on the packet.

Now comes the fun part! The assembling!


In a Lasagne dish, always start by spreading vegetables and chicken




Spread the Bechamel sauce over it.



Line the pasta sheets over it
.

Some Mozzarella cheese and black pepper if you fancy!



Repeat the same process till your lasagne dish gets filled.

For the final touch add all your mozzarella cheese but don't fill it to the brim. You want to keep some space for the cheese to get grilled.

Cover the dish with an aluminium foil and into the microwave for 25 mins.

Remove the cover from the pasta and bake it for another 10 mins on high rack till its golden brown.

And it should be done!
