Cream Cheese Spaghetti Pasta

Hey Guys! Today's post is a really really easy recipe I made the other day. I made it after coming from work with just 5 or so ingredients and some other bits n bobs and it was ready in no time!



For making it for 2 persons you will require

Spaghetti - About 40 - 50 sticks (I use these from Del Monte)
Cream - 2 tbsp
Garlic - 5-6 crushed cloves
Grated Cheese - 4-5 tbsp (I use this)
Chopped parsley / coriander - 4-5 strands
Red chili flakes - 2 tsp (or as per taste)
Oregano - 2 tsp
Pepper - 1-2 tsp

In a large pan, boil water, salt (as per taste) and olive oil (about 1-2 tbsp) to prevent it from sticking. Bring it to a boil.

Now add your spaghetti, after sometime with the help of tongs gently stir/ twist the spaghetti.

When the spaghetti is cooked, drain the water but save some cooking broth (about 1/2 cup)

Then in a large frying pan, fry garlic cloves for a minute. Do not under cook them you want the goodness of garlic infused in your spaghetti. At the same time don't burn the garlic, burnt garlic tastes bitter. You want to fry them just perfect. Add red chili flakes

When your garlic is browned, on low heat add light cream and stir. Now add grated cheese and cook for 2 minutes (Keep stirring).

Add spaghetti, saved cooking broth, parsley, oregano and pepper. Leave it on low heat for 2 minute.

And it's done! I told you it was easy. It's perfect for days when you don't feel like cooking but still want to eat something yummy.
